Auckland has absolutely lost the plot in terms of weather, so I decided to do a little baking and continue my ongoing quest to find the perfect dairy free sweet treat!
I’ve changed up the recipe originally created by UK Blogger Amelia Liana for bit more a fruity/chocolatey vibe, but you can see her version in one of her ‘What I Eat In A Day” vlogs right here.
- 4 mashed bananas
- 1/2 cup coconut flour
- 1/2 cup almond butter
- 2 TBSP LSA & 3 TBSP water combined
- 2 TBSP dairy free avocado/olive oil spread (melted 30 sec in the microwave)
- 2 TSP cinnamon
- 1 TSP baking powder
- 1 TSP baking soda
- 1 TSP vanilla extract
- Cacao nibs
- It’s as easy as adding everything into one bowl and mixing!
- I added everything and mixed until it was nice and smooth like the picture below and then added the berries in afterwards so that they weren’t blended and stayed in their true form 🙂
I was beyond pleased with how these little munchkins turned out and definitely recommend them for anyone even if you aren’t on a dairy free or vegan diet!
